For my toast, I like using Sara Lee’s whole wheat bread or any other close alternative.
Avocado toast
Everyone’s favorite toast. I keep mine simple though.
- Mash ripe avocado on the toast (I use half an avocado per slice of bread)
- Sprinkle with a dash of salt and pepper
- Top with a runny sunny-side-up egg (or some days I use one 8min. boiled egg)
- Drizzle with balsamic vinegar
- Sprinkle with a dash of Everything But The Bagel seasoning from Trader Joe’s
Creamcheese + Fig Jam
This one’s an accidental discovery. I was craving for gourmet cheese and jam but I had nothing at home at that time. I didn’t have good cheese, I didn’t have my favorite baguette to pair it with either. So just to satisfy the cheesy and a touch of sweetness taste, I whipped this up and ended up being my new favorite breakfast or snack option.
- Spread cream cheese on toast
- Top and spread fig jam (you don’t need a lot)
- That’s really it. So simple yet it’s sooo good!
Creamcheese + Smoked Salmon
- Spread cream cheese on toast
- Top with micro greens or chopped spring mix will do
- Top with smoked salmon
- Drizzle with a tiny bit of balsamic vinegar
Sardines Salad
This one was an experiment. I love Spanish Sardines in a bottle (you can typically get this in asian groceries) so when I was eating clean and avoiding rice, I had to be creative on how to eat my sardines.
- Chop about half a tomato into small cubes
- Chop about a cup of greens (I use spring mix)
- Chop 2-3 pieces of sardines (this has olive oil which helps dress the salad mixture)
- Mix them all together in a small bowl
- Drizzle with one soft squeeze of lemon
- Spread salad on toast for an open faced sardines bruschetta
