Creamy Lemon Chicken

I’ve found the best creamy lemon recipe online but I modified it a bit based on what I have at home. Quite a number of folks on Instagram have asked me for the recipe so thought I’d share my modified version below:

This isn’t the best photo since I just grabbed this from my Instagram story. I’ll try to add a good one the next time I make it!

Ingredients

• 4 medium chicken breasts (boneless, skinless)

• 1 tablespoon Italian seasoning — I didn’t have Italian seasoning so I just used and combined basil, thyme, and rosemary

• 1 tablespoon olive oil

• 2 tablespoons butter (divided)

• 1.5 cups baby spinach

• 1/2 cup onion (minced)

• 3-4 cloves garlic (minced)

• 1 cup heavy cream

• 2 tablespoons lemon juice

• 1/4 cup Parmesan cheese (optional)

Instructions

• Season chicken with Italian seasoning or herbs, salt & pepper. Add 1 tablespoon olive oil to a large skillet over medium heat. Add chicken to the pan and cook for 5-6 minutes per side. Remove from skillet and set aside.

• Add butter onion, and spinach to the skillet and cook for 2-3 minutes, or until just tender. Add the garlic and cook for just under a minute. I also add slices of lemon at this point but that’s optional.

• Add heavy cream, lemon juice, and parmesan cheese; stir to combine. Return chicken to the pan and simmer 3-4 minutes or until the sauce has thickened. Taste and adjust salt & pepper if needed. If the sauce is too thick, add 1/4 cup water, chicken stock or broth.
